The Best Homemade Marshmallows

Simple homemade marshmallows

Homemade marshmallows are one of those things I always thought would be really complicated to make, until I tried it for myself and realized how ridiculously easy they are to make. In the fall and winter I love making a weekly batch to enjoy with my morning coffee or with hot chocolate.

The best part when you make homemade marshmallows using quality ingredients they’re actually very nourishing for your gut health. Delicious + healing Yes Please!

Trust me, you’re going to want to make these ASAP. These are light, airy, squishy little marshmallow mouth pillows.

Homemade marshmallow recipe: 


Ingredients: 
1cup water - divided
3 Tbsp grass fed gelatin - I like the brand Further Foods
1/2 cup maple syrup
1/2 cup organic cane sugar
2 tsp vanilla
4 egg whites
1/2 tsp cream of tartar

Directions:

1. In a mixing bowl / stand mixer bloom the gelatin in 1/2 cup of water
2. In a separate bowl whip egg whites + cream of tartar until stiff peaks are formed. Set aside
3. In a small saucepan over medium heat, heat the sugar, maple syrup and 1/2 cup water. Bring to a slow boil, stiring to ensure the sugar doesn’t burn. once boiling let sit for 2-3 minutes and remove from the heat.
4. Stir the bloomed gelatin and slowly add in the sugar mixture and vanilla
5. Continue to mix on high for about 7-10 minutes. The mallows will turn from light coffee color to white and start to thicken. Continue to mix another minute or so. When it becomes the consistency of marshmallow fluff ( see last slide) add in the egg whites. Mix for an additional minute
6. Pour into a greased baking dish. Refrigerate 2-3 hours to set.

Optional once set cut and dust with equal parts powdered sugar and organic cornstarch or arrowroot powder.


Tips: 

  • If you want thick full size marshmallows pour into and 8x8 dish. For mini’s pour into 9x13 pan. 

  • keep watch as you’re mixing the mallows, set quickly and if you mix them too long they will set in the mixing bowl and turn lumpy. Lumpy marshmallows are still delicious just not very pretty!
